Caramelized Applesauce

Here are some apple recipes, since it is nearing apple picking time.

I used to make applesauce with my students in the fall, but not this special one.  This one is mighty tasty.
 
8-10 apples, peeled, cored, sliced
juice and rind of 1 lemon
1 C apple juice or water
½ C sugar
¼ C marmalade
1-3 t cinnamon 
few dashes of nutmeg

            Pour lemon juice over the sliced apples.  Combine remaining ingredients in a heavy pot.  Cook, stirring until sugar dissolves.  Bring to a boil and simmer 5-10 minutes.  Add apple slices and lemon rind.  Simmer until apples are soft, 30-45 minutes.  Transfer to a bowl and mash, or leave chunky.  Reduce syrup over high heat until thick.  Blend into apples.  Serve hot or cold.   
            Can be frozen.

            Kind of like an apple pie without the crust.
