This requires a little extra effort, but is so worth it for a special breakfast. Very tasty!
This can also be made with other fruit in season or from the freezer. I've used a bag of frozen peaches, fresh pears, and adding a few berries could make it very colorful. Be creative.
½-1 loaf French bread (sourdough)
5 large eggs
1½ cups milk
1 tsp vanilla extract
3 granny smith apples-peeled and sliced
½ cup packed brown sugar*
½ cup butter or margarine
2 tbsp light corn syrup
1 tsp cinnamon
pinch of nutmeg
Cut enough bread into about 1" cubes to fill 9 x 13" baking dish. Remove and place bread cubes into a gallon-size baggie.
Whisk together eggs, milk, vanilla--pour over bread. Seal bag, place in a bowl, and chill overnight.
In the morning, preheat oven to 350. Coat 9 x 13” baking dish with cooking spray.
In saucepan over low heat, combine brown sugar, cinnamon, nutmeg, butter, and syrup. Stir often until mixture is smooth. Pour into baking dish. Top with apple slices---arrange bread over apple in an even layer.
Bake for 40 minutes
Loosen with knife then invert onto platter.
*Substitute ½ cup white sugar and 1 tbsp molasses.
