Here are some apple recipes, since it is nearing apple picking time.
I used to make applesauce with my students in the fall, but not this special one. This one is mighty tasty.
8-10 apples, peeled, cored, sliced
juice and rind of 1 lemon
1 C apple juice or water
½ C sugar
¼ C marmalade
1-3 t cinnamon
few dashes of nutmeg
Pour lemon juice over the sliced apples. Combine remaining ingredients in a heavy pot. Cook, stirring until sugar dissolves. Bring to a boil and simmer 5-10 minutes. Add apple slices and lemon rind. Simmer until apples are soft, 30-45 minutes. Transfer to a bowl and mash , or leave chunky. Reduce syrup over high heat until thick. Blend into apples. Serve hot or cold.
Can be frozen.
Kind of like an apple pie without the crust.
